Pignolo
DOP FRIULI COLLI ORIENTALI
It can be considered the noblest autochthonous variety of vine with black berry. It produces few little and cylindrical bunches, with round, sweet, little and very pruinose grapes; therefore a rare and fine grape as the wine which will be produced.
In the past, before 1400 it was known and cultivated in the hill zone south of Cividale del Friuli. For a long time it was cultivated in this region until the second post war period in which it risked the extinction. A the end of the ’70 a long project co-operated by the nurseries of Rauscedo and the consortium has started in order to revaluate and safeguard this variety of vine.
Nowadays it produces an excellent wine for ageing, in some cases also further 10 years, with a big, majestic, rustic and typically Friulian character.

VINIFICATION: | maceration on the skins for 8 days, fermentation at controlled temperature. Soft pressing. Aging for the first two years in tonneaux and then it follows a year in steel barrels |

COLOUR: | intense ruby red |
FRAGRANCE: | delicate, complex aroma with different shades: it is characterized by scents of ripe red fruit. They are enhanced by soft spicy shades caused by the aging in tonneaux. The end is balsamic with evident scents of liquorice |
TASTE: | it has got great personality and character. It is an intense wine, complete, round, very dense and enchanting, with good acidity. It reminds spices scents, as tobacco, blended by scents of overripe red fruit. The tannins are important, elegant and dense but at the same time balanced in order to create a guarantee of longevity. |
MATCHES WITH FOODS: | it is surely a meditation wine. It gives the best of itself with broiled meat, fatty and grilled meat as Fiorentina steak and rib eye steak. It pairs well with large size game |
